O'fish'ally launched 23rd November, some very exclusive 'Cornish Canned, Rod & Line Cornish Caught Bluefin Tuna', probably the first time tuna has been caught and canned in the UK, definitely the first time we know of in Cornwall, and it was caught less than 25 miles from our cannery...
Certainly a very unique product, because one of the two fish, weighing 56.6kg was caught, using rod & line, filleted, and canned, all by one man, me, the other, 74kg, was caught on the same day, and has also been canned...
There are two types of meat: AKIMI is the lean red meat, used by sushi masters in sashimi, and the other is TORO, a fatty white meat also used in sashimi, but both these have been cooked in the can, for sterility and longer shelf life...
There are also four types of tuna:
Skipjack & Albacore are the more common species for tinned tuna, often caught using massive nets and not as ecologically sustainable
Yellowfin & Bluefin are the less common, and therefore more expensive, with Bluefin regarded as the highest grade, often 'pole' or 'rod & line' caught, so much more ecologically sustainable, and in the UK we have just 39t quota, with the vessel these were landed on, just 3t!
Water or Oil: we use 30g Cornish 'Pure Blue' Spring Water with 100g Bluefin Tuna, apparently having 66 calories compared to 145, is better for Omega 3, and a little less for Selenium & Vitamin D (48.7mg/55mg), low in fat, and 1/4 Sodium, Mercury 10.7mg compared to 29.75g, and most importantly, 100g of fresh or canned Bluefin Tuna has 24.9g Protein

Our canned shellfish is suitable for ambient temperature storage, but you can always chill it in the fridge too

We are Cornwall's, and England's, first in-house cannery for decades... and currently just a small batch cannery, being the 1st has had some significant challanges, and we only have limited funds to investigate them.
