Did you know sardines and pilchards are the same species? Sardina pilchardus! 

In Cornwall they have been affectionately known as pilchards, The Pilchard Works in Newlyn do a fantastic job of honouring that tradition, and rightly so, but they are canned in Brittany, we can Cornish produce here in Cornwall, and it has been a regulatory challenge that is not for those that seek an easy life, plus, they are now internationally recognised with an MSC accreditation, and known as Cornish Sardines!

Anyway, January 2025 was the first time Cornish Sardina pilchardus were canned here in Cornwall, they are, as seems to be the case, pricier than other brands, but National Living Wage or above is what the Cornish Canning Co pays, and it has very technical expertise that is valued at eye-wateringly high cost, so I do hope you buy one every so often, or as a gift, we will never compete with supermarket costs.

Ingredients
Sugar, Red Pepper (20%), Water, Distilled Vinegar, Pear Concentrate, Garlic, Onion, Tabasco® Sauce (Distilled Vinegar, Red Pepper and Salt), Ginger, Salt, Thickener: Xanthan Gum, Spices
